I have fallen in love with a vegetable. Well several different versions of the same one.

Swiss Chard.

Bright Lights is the version pictured to the left. Its earthy, crunchy, light, and wholesome. Something thats hard to find in an uncooked green. i always read about it on food blogs, yet never had I eaten it until I found it on sale at the local produce store. Now I am in love.
